On Monday 15 July, Whatley Manor in Wiltshire played host to three highly acclaimed chefs as part of Hospitality Action’s ‘Social Sunday’ fund-raising initiative. Executive Chef Niall Keating, who was awarded a Michelin star in 2017, cooked alongside Christian Bau of three-starred Victor’s Fine Dining in Germany, Mark Birchall of two-starred Moor Hall in Lancashire, and Brett Graham of also two- starred The Ledbury in London.
An alfresco reception of cocktails and caviar (sponsored by Exmoor Caviar) was followed by a seven- course dinner, accompanied by paired drinks. Each guest chef cooked two courses for the dinner which included: East Coast lobster with smoked marrow, Banks tomato and rosehip (Mark), Fresh almonds, blood nectarine, green beans and frozen duck liver parfait (Brett), and Turbot with razor clams, heart of palm, yuzu-koshu and XO-oil (Christian). Niall cooked a main course of Wagyu beef, kohlrabi, date and ssamjang.
The event raised a total of £10,200 for Hospitality Action, to support their work with hospitality staff who find themselves in crisis. Commenting on the dinner, General Manager Sue Williams said “What a remarkable evening we had. Four such highly awarded chefs, each giving it their all. Happily giving up their time to support Hospitality Action and
to give our guests a most memorable meal. Lots of fun was had in the buzzing atmosphere of the kitchen and without question the whole team got so much from the experience. An all-round win win.”
