November will be a very exciting month at Whatley Manor!

Not only is an extensive refurbishment being undertaken at Whatley Manor’s new Grey’s Brasserie, which will be completed to re-open on 1 November, but the hotel will also launch The Green Room, an exciting new multi-functional space that will be overseen by the talented chef, Laetizia Madsen.

Grey’s Brasserie’s new look will feature comfortable banquette-style seating, handsome leather-clad walls, and a lovely neutral colour scheme throughout. It is a delightfully informal restaurant where Sous Chef George Dingle, collaborating with Executive Chef Niall Keating, showcases a delicious menu repertoire of British comfort dishes, including his now signature hits – Water Crust Pork Pies (from a trolley service) and a fine, traditional Sunday roast. Open daily, Grey’s has quickly become a favoured dining destination for locals and hotel residents alike, offering a more casual alternative to The Dining Room, where Niall Keating has created an outstanding, original gastronomic tasting menu, imparting influences gained from his remarkable international experience in California, Denmark and at Sat Bains Restaurant, prior to joining Whatley Manor just a few short months ago.

The Green Room was previously a low-key private function space, but is now being transformed into a vibrant new hub for food and drink enjoyment. Laetizia Madsen’s chef pedigree is impressive, too – she joins Whatley Manor from Benu in San Francisco (three Michelin stars) – and her new role overseeing The Green Room will be an opportunity to personalise the space with her international cooking flair. The newly kitted-out kitchen/bar will feature Gaggenau’s latest kitchen appliances and gadgets, and will be a showcase environment for a full programme of lunches, dinners, cookery demonstrations, cheese and wine tastings, cocktail tutorials, and small music events, while also being available for exclusive private and corporate hire.
