2019 is an exciting year for Whatley Manor Hotel and Spa

The year starts with a re-decoration refreshment of the 23 bedrooms, including 11 Suites, the hotel  will be close on the 6th January and re-opens fully on February 13th, to welcome guests for Valentine’s celebrations.

Food is Whatley’s passion, since Executive Chef Niall Keating took the helm in December 2016, the choice of dining options has expanded. Grey’s Brasserie had a complete refurbishment since Niall’s tenure as well, making it even more stylish with menus showcasing locally sourced British comfort classics.

In October 2017 Niall was recognised with a Michelin-star for his daring & innovative menus in The Dining Room, closely followed by the award of Michelin ‘Young European Chef of the Year’ in 2018.

Niall oversees the three dining options, Grey’s Brasserie, The Dining Room, and the Green Room; a social and interactive chefs table where guests are seated at the gastronomy bar.  Whilst the rooms are being renovated, the kitchen will also be completely replaced and is being designed by Niall to ensure a more efficient and effective working environment.

A bespoke Athanor stove will consist of four induction hobs, two plancha cook plates, an integrated water boiler, and a ‘quick therm’ salamander grill, which uses infra-red technology. The stove and other features of the kitchen will be finished in white enamel.

On re-opening as part of the wider experience, guests will be able to take a ‘behind-the-scenes’ tour. In addition from 1st March every Friday and Saturday lunchtime, Niall will invite guests to take a seat in his new kitchen at the ‘Kitchen Table’. This interactive and intimate experience will give guests a unique view into an internationally recognised Michelin-starred kitchen, whilst encouraging foodie discussion with the chefs as they prepare and serve your food.

During this time Aquarias Spa will close briefly for maintenance from January 7th and will re-open on January 16th
